Recipe: (12-15 Serving)
Icing
3 ounces cream cheese, softened
2 tablespoons butter, softened
1 teaspoon orange zest
2 tablespoons fresh orange juice
2 1/2 cups confectioners' sugar
Rolls
1/4 -ounce package yeast
½ cup warm water
½ cup scalded milk
¼ cup sugar
⅓ cup butter or shortening
1 teaspoon salt
1 egg
4 cups all-purpose flour
Pour the water and milk in with the yeast and sugar letting the yeast activate. Mix in the butter and egg then finally the salt and flour to produce a ball of dough, cover in a bowl, let it raise in a mildly warm place. after it has risen roll it out to a big rectangle, paint it with butter, sprinkle cinnamon and sugar lightly over rectangle, roll it into a roll, slice off about half inch spirals and bake in oven until they rise into cinnamon rolls. While this is baking mix all the ingredients together for the icing. After the cinnamon buns cool just a little (still warm but not to hot to eat) put the icing on the top of them. It will melt a little and drip off the sides, enjoy!
One of the most important things we do at Camp Carolina is to buy the best ingredients you can find because you need to take care of your body, you only have one body for your whole life!, So get organic turbinado or raw sugar, buy the cream cheese and butter from a local hormone free creamery, use a real organic orange, get fresh organic flour like Lindley Mills (optional choice organic gluten free). You might even use agave, maple syrup or even dates to more naturally sweeten your buns, if you do this you will need to estimate the liquid change in the food and realize how that affects the recipe.
